Chocolate Chip Mandelbroit

1 Cup Sugar
1 Cup Oil
2 tsps. Vanilla
3 Eggs

DRY MIX
3½ Cups Flour
2 tsps. Baking Powder

CHIP MIX
12 oz. Chocolate Chips
1 Cup Chopped Walnuts
1 Cup Coconut (optional)


Pre-heat oven to 350º. Use a wooden spoon to mix. Blend sugar with oil. Add eggs one at a time. Add vanilla. Add dry ingredients. Add chip mix and mix thoroughly. Lightly flour hands. Divide dough into quarters. Form each quarter into logs at least 1” wide (wider if desired), 12” long and ½” high. Roll in flour. Place on lightly greased (Pam) cookie sheet. Bake 20 minutes. Remove from oven. Slice on angle ¾” wide. Turn on side and return to oven for 5 minutes. Turn on other side and bake for 5 minutes. Cool on rack.

They are even better if made a couple of days ahead of time.


Traditional Hamantashen

Recipe from Laura Solomon

Ingredients
4 eggs
1 cup sugar
½ cup oil
Juice of 1 lemon
Rind of 1 lemon, grated
1 tsp vanilla extract
5 cups flour
2 tsps. Baking powder

Fillings Buy cans (Solo)or jars in the baking section. Prune, cherry, apricot, strawberry, etc.

Pre-heat oven to 350 degrees. Grease cookie sheet. Beat eggs and sugar. Add remaining ingredients, and mix well.

Make a small ball of dough (around the size of a jack ball). With your hands flatten the ball to form a thin circle (around 2 inches in diameter). Put one teaspoon of filling into the center of the circle. Three times around the circle, lift up sides and pinch together to make a triangle. Make sure to pinch the sides very well or it may open up in the oven.

Bake in oven for 20 minutes.
